Easy Pecan Pie for Daddy's Birthday!!

Because his birthday is on Wed. and we hardly have time with church and all we had his birthday dinner this evening. I wanted him to come home to a neat and orderly and happy family. We caught up on some of our house work which had been neglected with our trips these last two weeks. We made a pot roast, brussel sprouts, organic carrots, buttered red potatoes, and fresh strawberries. Sarah and John Mark made pecan pies for dad. We topped it with Breyers vanilla ice cream.

He had time to relax and even went on a bike ride with James around the neighborhood. I want to go when my hand heals. We have had a nice evening.

The pecan pie recipe is so easy. Since my hand is injured the kids had to make them. I bought refrigerated pie crust in the roll. The crust was really good and so much better than the frozen ones.

The kids unrolled it into the pie pans and then mixed up the recipe and baked it. Preheat the oven 350 for 5 minutes.

Easy Pecan Pie
1 cup light corn syrup we used Karo
3 eggs
1 cup sugar
2 Tablespoons melted butter
1 teaspoon vanilla
1 1/2 cups pecans (we actually used chopped because of price)
1 deep dish pie crust

Stir in the first 5 ingredients then mix in the pecans and pour into pie crust. Bake at 350 oven for 55-60 minutes. 8 servings each pie. We placed our pie pans on a Pampered Chef cookie sheet to help prevent the bottom from over cooking. They came out perfect.
