Sunday Afternoon
When we are near our adult children and our parents we have a rare privilege of having Sunday afternoon dinner together. Yesterday we all went to church (they in Antioch and we in Hendersonville). Then we met in Hendersonville for the afternoon. This usually includes music, food, computer discussions, Bible discussions in some form, games occasionally, and other unexpected incidents. Yesterday was no exception we had almost all of those things mentioned.
The unexpected was that Lawrence was busy making salsa, John Mark made homemade hot sauce, Josiah was commissioned to make communion bread, which disappeared before the meal began and the peanut butter fudge disappeared. What makes this so unexpected is Lawrence is not a cook and has spent very little time in the last 27 years in the kitchen (unless it was kissing the cook or helping do dishes).
We presently have a great supply of produce from my brother's farm. We all had a great time helping plant and tend the garden earlier in the year and now we are enjoying the veggies. We have had corn, cucumbers, zucchini, yellow squash, onions, hot peppers, garlic, potatoes, and tomatoes. We put up about 100 ears of corn this last week, 7 quarts of tomatoes, made two batches of salsa, one batch of hot sauce. We have had numerous zucchini dishes, steamed squash, fresh potatoes, tomato sandwiches, garden soup, sliced cucumbers, etc. We should feel wonderful with all those vitamins. My children had a great experience of eating raw corn fresh out of the field.
Back to Sunday afternoon.................
We had a zucchini dish with pasta sauce and cheeses which is a great dish for using that zucchini and for feeding vegetarians. We had baked potatoes with topping choices. The homemade salsa and hot sauce was great on these. We had a lot of other things too.
Below is the recipe John Mark used for his hot sauce. John Mark is 10 years old.
1 1/2 cups vinegar we used white
1 Tablespoon olive oil
6 chopped peppers We used two heaping Tablespoons
1 teaspoon black pepper
1 Tablespoon minced garlic
6 ounces tomato paste
1 teaspoons of lemon juice
Saute peppers and garlic in olive oil. Stir in tomato paste and half of the vinegar. Bring to boil and add the rest of the ingredients. Now enjoy!
Communion bread recipe was given in an earlier post February 2006.
For the Salsa Lawrence used varying amounts unmeasured of the following cilantro, lime, tomatoes, garlic, onions, and chopped hot peppers. This was yummy!!! We ate it on potatoes and in the evening with chips.
The peanut butter fudge was made with a time tested really complicated recipe. I jar of smooth peanut butter 18 ounces and 1 store bought container of vanilla frosting. Each was microwaved 1 - 1 1/2 minutes and then combined and poured into an 8 inch square container and refrigerated a few minutes until cool. It is so easy and very addictive and very bad for the waist line.
We had a great time visiting of course. With the new baby due this week and the wedding on the 18 of August there was plenty to discuss.
The Redding Brothers got in a practice while our future daughter in law and her brother went thrift store shopping.
I got to play with the grand baby and my little Esther. Anya went off to sleep after 1 book and a little reading and right in the same room with the drums, guitar, and bass playing! wow! wish I could do that!
