Hot Artichoke Spinach "Dip"

For the New Year's Eve party we attend Sarah made this dip. It turned out really yummy. I really liked the texture and the taste!

Hot Artichoke Spinach "Dip"

1 jar artichoke hearts, drained and chopped with the Pampered Chef food chopper.
1/3 cup grated Romano Cheese
1/4 cup grated fresh Parmesan Cheese
2 Tablespoons chopped onion
10 oz fresh spinach chopped
1/3 cup milk
1/2 cup sour cream
1 cup pepper jack cheese

Preheat the oven 350
Mix the artichoke hearts, Romano Cheese, Parmesan cheese, and onions. Set aside.
In another bowl mix spinach, milk, sour cream, and pepper jack cheese. Stir in the artichoke mixture and spoon into a greased dish. I used a small 8 X 6 rectangle dish. You may use what you wish. Cover with foil.
Place in oven for about 20 minutes. I uncovered after it was heated through and the spinach wilted (about 10 minutes). I topped the finished dish with a little more shredded pepper jack and heated a little more to melt. It may not need any more heat.

We ate ours warm with tortilla chips. I think it would really be good with pita chips.
