LTC - Mini Retreat - Pizza making too!

I haven't really posted in a long time! We have been in what I call LTC season. Leadership Training for Christ is a program we do with our young people from church. This is an intense time of Bible study and quizzes, scrapbook making, choral rehearsals, dramatic productions, banner making, and more!

We have only about 3 more weeks before conference so I am hosting a weekend to work on all the last minute details. I called this our LTC mini retreat.

Tonight the kids will make their own supper. They will each make their own mini pizzas. The girls all wanted veggies on theirs - artichokes, mushrooms, zucchini, broccoli, in addition to cheese and sauce. I'm sure the boys will want to make theirs meat lovers.

Below is the pizza crust recipe I have made for years for individual pizzas.

3 Packages or Tablespoons of yeast
1 teaspoon sugar
3/4 cup water (105-115 degrees)
3 cups all purpose flour (my favorite is 1/2 wheat and 1/2 white)
1 tsp salt
1/2 cup additional water (105-115 degrees)
2 Tablespoons oil
vegetable cooking spray

Combine the first 3 ingredients in a 2 cup measuring cup; let stand 5 minutes.
Combine yeast mixture, flour, and next 3 ingredients in a large bowl, stirring until well blended.
Turn dough out onto a floured surface, and knead 5 minutes. Place in a bowl coated with cooking spray, turning to grease the top. Cover and let rise in a warm place, free from drafts, 30 minutes until dough is doubled in size. Punch down and knead lightly 4 or 5 times. Divide dough into small pieces. I usually pinch off a small amount. I get about 11 out of one batch. I roll these out one at a time and cook each side about 1 minute in a skillet coated with cooking spray. I cool on wire racks and then freeze or put on a cookie sheet and assemble pizza.

Well my teens have arrived for the weekend so my busy time begins!
