60 Minute Dinner Rolls

60 Minute Rolls
2 packages yeast or two level tablespoons of bulk yeast
1/2 cup Water
2 Tablespoons butter
3 Tablespoons sugar
1 1/4 cup of milk
1 1/2 teaspoons salt
4-5 cups of flour
Mix the yeast and sugar in the 1/2 cup water and set aside (it should get foamy) You can use a small measuring cup to do this.
Mix 3-4 cups flour and salt in a large bowl.
Heat milk and butter until it is melted and cool a little while. You do not want it over 120 degrees.
Mix the milk mixture with the flour and add the yeast mixture. Stir until well mixed. If it is not too sticky begin to knead the dough and add the rest of the flour as needed. Knead for 5- 10 minutes and then place in a greased bowl and turn to coat and then cover the bowl and let rest for 15 minutes or so. It should look a little puffy. Punch down and divide into 2 sections. Take each section and shape into 12 balls. I place these in a greased pan side by side. I'm not sure if they will all fit into a 13 X 9 pan. You could just spray two cake pans and put the balls into that. Then let them set covered for another 15 minutes or so. Then bake them in a 400 degree oven for 15 minutes until lightly browned. You'll will smell them and they will look good. You may turn them out and enjoy. The bottoms might get a little soggy if left in the pan too long from the condensation.

LTC - Mini Retreat - Pizza making too!

I haven't really posted in a long time! We have been in what I call LTC season. Leadership Training for Christ is a program we do with our young people from church. This is an intense time of Bible study and quizzes, scrapbook making, choral rehearsals, dramatic productions, banner making, and more!

We have only about 3 more weeks before conference so I am hosting a weekend to work on all the last minute details. I called this our LTC mini retreat.

Tonight the kids will make their own supper. They will each make their own mini pizzas. The girls all wanted veggies on theirs - artichokes, mushrooms, zucchini, broccoli, in addition to cheese and sauce. I'm sure the boys will want to make theirs meat lovers.

Below is the pizza crust recipe I have made for years for individual pizzas.

3 Packages or Tablespoons of yeast
1 teaspoon sugar
3/4 cup water (105-115 degrees)
3 cups all purpose flour (my favorite is 1/2 wheat and 1/2 white)
1 tsp salt
1/2 cup additional water (105-115 degrees)
2 Tablespoons oil
vegetable cooking spray

Combine the first 3 ingredients in a 2 cup measuring cup; let stand 5 minutes.
Combine yeast mixture, flour, and next 3 ingredients in a large bowl, stirring until well blended.
Turn dough out onto a floured surface, and knead 5 minutes. Place in a bowl coated with cooking spray, turning to grease the top. Cover and let rise in a warm place, free from drafts, 30 minutes until dough is doubled in size. Punch down and knead lightly 4 or 5 times. Divide dough into small pieces. I usually pinch off a small amount. I get about 11 out of one batch. I roll these out one at a time and cook each side about 1 minute in a skillet coated with cooking spray. I cool on wire racks and then freeze or put on a cookie sheet and assemble pizza.

Well my teens have arrived for the weekend so my busy time begins!

Snow Storm 2012

The snow storm gave us a lot of opportunities to enjoy the snow. We also enjoyed some baking and eating. I was snowed in from Sunday until Saturday. Almost a week at home with my family!!

Christmas Favors for Nursing Home



Our small church is preparing to sing Christmas Carols at the local nursing home where several of our members work. We wanted to take the patients some little favor. Because of dietary limitations we could not take candy or food items. We decided we could make some little jingle bell pins to pin on each patient. We also decided to make some little flower pins that look a little like Christmas. I thought I would share them here. There are 85 patients!
