Lavender Scones

I promised to share more recipes.

Here is the recipe I used for my lavender scones.

3 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2-4 Tablespoons sugar
8 tablespoons butter or margarine
1 egg
1 cup buttermilk or half and half soured with lemon juice
2-3 Tablespoons of lavender - I used some organically grown by my neighbor. I had dried them and just rubbed the flowers until it fell off and I removed stems and used the lavender.
A little lemon zest and a little lemon flavoring

Directions:
Preheat the oven to 450.
Blend the dry ingredients in a mixing bowl and rub in the butter. In a small bowl beat together the egg and buttermilk. Make a well in the flour mixture and pour in the liquid. Mix together for a few seconds. Turn out on a floured board and knead gently and roll out just over 1/2 inch thickness. You may want to make a few circle about 6 inches around and cut wedges with a pizza cutter or cut out your scones out with a biscuit or cookie cutter. I used a flower shaped cutter and made small scones.
Place the scones on a lightly floured cookie sheet and bake about 12 -15 for full size or less for the mini ones. Cool slightly and place in a cloth lined basket and serve with tea. I had lavender earl grey tea. Yum!!

Hint: If you need to make these a day ahead warm them slightly in the oven or microwave before serving.


I frosted them with powder sugar, lemon flavoring, and meringue powder frosting.

I really like these a lot. After the response I received from my family I was surprised the ladies enjoyed them so much. It is hard for some to consider eating a flower that they usually bathe with:)
