Easy Parmesan Chicken

Yesterday I posted about cooking for Impact Northwest this last weekend. On the menu was also Parmesan Chicken which is so easy to make. I was also asked for this recipe. So here it is!

You will need 4 ingredients for this recipe.

1. Chicken strips or breasts ( I like the strips for this recipe because they cook so fast.)Make sure your chicken breasts or strips are thawed if they have been frozen. You need about 3 strips per person.

2. Parmesan

3. Italian bread crumbs or homemade bread crumbs mixed with italian seasoning. They are so easy to make yourself.

4. Melt a stick of margarine or butter

Combine the parmesan and bread crumbs in equal parts. I start with about 1 cup of each. I really do not measure. I do a little at a time because they start to get clumpy.

Dip the chicken strips in the melted margarine and roll in the bread crumbs/parmesan mixture then place on baking sheet oiled or with parchment paper or I spray my pan with cooking spray. Bake at 350 for 13-15 minutes or until done.

These are wonderful! I cooked at least 30 lbs. of these. We had caesar salad, home baked bread sticks, roasted potatoes (which I was not pleased with), parmesan chicken, and chocolate sheet cake.

i use that recipe all the time... instead of bread crumbs sometimes i use mashed potato flakes. and diffrent seasonings depending on what we feel like.

That sounds great! Do you mix them with anything or just the seasonings??

potato flake, seasoning, and parm. cheese. dip chick in melted butter, then in dry mix and bake. Phoebe and Jack both love this.
