Pumpkin Pancakes and Fall Cooking

What a wonderful week we had on Redding Mountain!

We did our once a month cooking and came out with 36+ meals each. It feels so good to have the freezer full of dinners. Yummy ones at that. We fixed black bean soup which included about 20 quarts of homemade salsa we made! It is a little spicy. We fixed stuffed shells, meatloaf, teriyaki burgers, teriyaki chicken, bean and cheese burritos, small pizza crusts, skillet spaghetti, chicken pot pie, and probably a few more I cannot remember.

The pumpkin pancakes were made by Daniel who will be 16 in November. Doesn't pumpkin make you feel like fall is really here? These were absolutely delicious without syrup. Some of the children sprinkled them with brown sugar. You really should try these they are yummy.............So here is the recipe.

Pumpkin Pancakes
2 1/4 cups flour (we used half unbleached and half fresh ground wheat)
1/4 cup packed brown sugar
4 teaspoons baking powder
3 teaspoons pumpkin pie spice
1/2 teaspoon salt
4 large eggs
2 cups milk
1 cup mashed pumbkin
1/4 cup melted margarine

We usually mix the wet ingredients in the mixer bowl and top with the dry ingredients and then combine them. After mixed. Bake on an oiled preheated griddle or skillet.

These are really delicious!
