Asparagus Quiche


This is the recipe I used for the Ladies Night Out I mentioned last night.

One 9 inch single pie crust ( I used premade frozen deep dish and I used the roll out kind that I put in my own pan) I made several

1 cup grated cheese or more if desired (I used Swiss)
1 1/2 cups buttermilk or soured half/half
3 large eggs
3 Tablespoons unbleached all purpose flour
1/2 teaspoon salt
1/2 -1 teaspoon dried herbs if desired (basil, oregano, marjoram, italian blend) I used a little thyme in mine
1 teaspoon minced garlic
2 cups cut -up veggies ( used 1/2 cup +onions and asparagus) Steamed a little in the microwave or sauteed in a skillet
1 cup additional grated cheese if desired.

Preheat oven 425

Prepare your pie crust or use premade. Sprinkle a thin layer of cheese on the bottom to seal the crust to prevent it from becoming soggy. Next I layered my veggies slightly cooked and drained well.

In a mixing bowl, combine the buttermilk, eggs, flour, salt. Beat until well mixed. Add herbs if desired and cheese.

Pour into crust and sprinkle with cheese if desired.

Bake on bottom rack for 15 minutes, then reduce heat to 350 and bake 30+ more minutes until a pick comes out clean and the quiche is set. Remove from oven and cool completely on a wire rack. Store in refrigerator or eat immediately.

It had been years since I made one for my family. I was surprised that they loved this and begged for more. I also made one with broccoli and onion. I like onions. This was so easy and a great choice for vegetarians too!
