Chocolate Cherry Pudding Cake - Lower Fat Version

1 Cake Mix Chocolate - I used Pillbury Devil's Food
1 can Wilderness No Sugar Added Cherry Pie Filling
1-2 eggs

1 sugar free/fat free Jello instant pudding mix prepared with non fat milk.

I mix the dry cake mix with the Pie filling and 1-2 eggs to help hold it together. An egg or two makes it softer. I also tried it without the egg and it is not as soft and tender but was still very good. This cooks much faster than a regular cake. I bake it in a 13X9 pan sprayed with cooking spray. Check after about 15 minutes to see if it is done. When it comes out poke holes in it and mix up the instant sugar free/fat free pudding and pour over the cake. I stick it in the fridge or freezer to cool quickly. You can add a spoon of lite topping such as cool whip or your favorite store brand.

If you are on Weight Watchers the whole cake has about 55 pts. depending on whether you use the eggs or not.

I really wanted something rich and chocolately without compromising my diet too much! It was very satisfying for me. It may not be a company dessert but my family really liked it.
