Scottish Oat Cakes


This is a recipe I have used several times to encourage my family to eat oatmeal. I usually buy oatmeal in bulk and several of
us are happy to eat a bowl of oats some are not:). I find it very filling. I have a few (husband included) who do not like hot oats. So we make this recipe. I add nuts (whatever is on hand) this time it was cashews. Sometimes I add almonds or walnuts. I also added raisins this time because I had them on hand. I add a touch of cinnamon as well. I use the lower amounts of oil and sugar. I serve this for breakfast with hot tea or milk. The leftovers are great for snacks or to carry along on errands in place of granola bars. This is not a fancy recipe just a very quick, economical, and practical way to do oats. Let me know if you try it.



Scottish Oat Cakes

5 cups of oatmeal

1 cup of flour

1/2-1 cup brown sugar (depending on your sweet tooth)

1 tsp. salt

1/2 tsp. baking soda

1/2-1 cup butter or lard (use smaller amount for a fat-reduced diet) I use all vegetable oil

1/2-1 cup water

Stir first 6 ingredients until crumbly. Sprinkle water over and work mixture with hands until a ball forms. Press into a buttered cake pan until mixture is 1/2-1" thick. bake in a 325 degree oven until golden brown. Slice into generous-sized rectangles.

I press this into a jelly roll pan for a thinner oat cake or my broiler pan (without lid) for a slightly thicker cake.

I made this this morning and we love it!! Easy, simple and it tastes a good bit like a scone. I added cinnamon and a dried fruit and berry mix we had in the pantry. Andrew said it would taste good with ice cream *eyes rolling*, but he ate 4 plain. I'm about the only one in our family who likes cooked oatmeal (actually, I don't even like it, but I eat it :-), so I'm very grateful for this easy, delish recipe!

hi, I have been thinking about making muesli (granola) bars for a while now, and I think I might try this recipe to start off with. Do you think muesli would work in place of (or in addition to) regular rolled oats?

Can't wait to try it, but I might start with a half quantity first, just in case.

Great recipe!! Thank You! I added 1/2 butter and 1/2 oil, because butter is soooooo tasty! I added raisins, cranberries, cinnamon etc. each time I made it just to jazz it up!
I had a recipe like this we loved but it had eggs in it. My 18 yr old is severely allergic to eggs, so he could never eat it. So now he's thrilled with this!!
